Crispy Baked Eggplant Fries



If you're looking for a really yummy and healthy veggie side dish a little different from what you normally make, try this one.  Tender on the inside and crispy on the outside, dipped in marinara sauce...so good!

It was my first time making faux fried veggies and it definitely won't be my last.  I can't wait to try this with other vegetables.  



Ingredients:
1 large eggplant
1 cup panko breadcrumbs
1 tsp. garlic powder
1 tsp. Italian seasoning
1/4 cup low fat parmesan cheese
Salt
1/2 cup egg whites
Marinara sauce

Directions:
1. Preheat oven to 450 degrees and spray a foil-lined baking sheet with cooking spray.
2. Cut eggplant lengthwise into 1/4 inch pieces.  Cut each of those pieces in half and each of those pieces into strips.
3. Mix together the panko, garlic powder, Italian seasoning and parmesan.  Divide this mixture into 4 portions (you have to divide it into 4 portions because once the panko mixture gets too wet it won't stick to the eggplant and at that point you move onto using the next portion).
4. Dip eggplant fries into egg whites and then panko mixture and place on baking sheet.  Spray tops with cooking spray and bake for 10-15 minutes or until crispy and golden.  Serve with marinara sauce for dipping.
