Shrimp Baked with Tomatoes and Feta


This was the dinner I made for my family on Valentine's day.  I wanted to make something red and I really felt like something, anything, other than pasta sauce.  This amazingly delicious dinner was ready in 30 minutes with the last 15 of those 30 minutes being in the oven.  It was so easy, so healthy and so tasty.  It was thoroughly enjoyed by Mr. B and myself as well as my 2 toddlers.  

If you love shrimp and you've never had it in combination with tomatoes and feta, you're in for a treat.  It was out-of-this-world good.  

If you're not a fan of shrimp or can't eat it, this recipe would also be delicious using any kind of white fish such as halibut, sole or tilapia.  After simmering the sauce, pour over fish fillets and bake at 400 degrees for 30 minutes.

I served this on top of whole wheat spaghetti for my husband and kids and I ate mine on top of spaghetti squash.  Honestly, it could even be eaten on its own, it's THAT good!  




Ingredients:
12 oz. cooked, and deveined shrimp, shell and tail removed (I just bought a 12 oz. bag of frozen, pre-cooked and shelled shrimp and let it defrost in the fridge overnight)
1 onion, diced
1 28 oz. can diced tomatoes, undrained
1 tsp. garlic powder
1 tsp. Italian seasoning
1 tsp. dried parsley
Salt
2/3 cup low fat feta

Directions:
1. Preheat oven to 425 degrees and spray a baking dish with cooking spray.
2. Spray a large pot with cooking spray and over medium heat saute onion until softened and golden.
3. Add tomatoes, garlic powder, Italian seasoning, parsley and salt.  Bring to a boil, reduce heat and simmer for 10 minutes.
4. Add shrimp and feta and let simmer for another 5 minutes.
5. Pour into baking dish and bake uncovered for 15 minutes.

  1. I LOVE feta and tomatoes! While I don't eat fish, I think this would also be amazing with chicken :)
